Carrots, especially those medium to large in size, can be stored for several weeks if kept in a produce bag in the vegetable crisper in your fridge, though are best eaten within 1-2 weeks.



Enjoy raw, julienned, finely sliced or grated into salads, coleslaws and in sandwiches. Add to soups, stews and pasta sauces. Roast alongside potatoes and other root vegetables in an English style roast or, for a Middle Eastern twist, roast with butter, honey and cumin and serve with natural yoghurt and fresh coriander leaves.
