Description
The Fermentary’s Fig and Ginger Kefir is a simple yet warming ginger fizz made with ancient spring water from Daylesford, a hint of lemon and sweetness from the fig and date. The SCOBY (Symbiotic Culture Of Bacteria and Yeast) thrives with these ingredients, and our bodies do too! It is naturally carbonated – left too long and it will get extremely fizzy. Tip it gently to mix in the sediment, and open with care. Sometimes you might get a bottle that is less fizzy than the last – you can simply pop it on the bench for the night and see how it is in the morning. There’s a touch of alcohol in fermented drinks like this – due to the natural fermentation process – and at the time of bottling it’s about 0.5%.
Keep refrigerated to avoid further fermentation.
